Ingredient and Portion
1 piece silk bean curd / 嫩豆腐/滑豆腐 1块
80g minced pork / 肉碎 80克
20g chopped chilli / 辣椒茸 20克
30g chopped Chinese mushroom / 冬菇 30克(切碎)
10g chopped coriander / 芫荽 10克(切碎)
20g chopped garlic / 蒜茸 20克
20g chopped spring onion / 葱花 20克
10g mashed Szechuan peppercorn / 花椒 10克(弄碎)
Seasoning
350g stock / 高汤 350克
1/2 tsp chicken powder / 鸡精粉 1/2茶匙
1 tbsp Szechuan broad bean chilli sauce / 豆瓣酱 1汤匙
1/3 tsp sugar / 糖 1/3茶匙
1 tsp light soy sauce / 酱青/生抽 1茶匙
1/2 tsp dark soy sauce / 黑酱油 1/2茶匙
1 tsp sesame oil / 麻油 1茶匙
1 tsp Chili Oil / 辣椒油 1茶匙
Method
1. Cut the bean curd into 4cm square cubes. Rinse the bean curd with hot water.
豆腐切成4公分方块。用热水洗豆腐。

2. Heat a wok with Chili Oil to stir fry garlic, chilli, peppercorn and broad bean sauce until fragrant.
锅子里烧热辣椒油,用来爆香蒜、辣椒、花椒和豆瓣酱。

3. Add in the minced pork and Chinese mushroom, stir-fry till cooked.
加入肉碎和冬菇,炒熟。

4. Add in the stock, and remaining Seasonings, slide in the bean curd cubes, braise for 3 minutes.
倒入高汤,加入其他调味料。滑入豆腐,焖3分钟。

5. Adjust the taste according to your preference. Thicken the sauce with some cornstarch solution.
可以依喜好调味。然后用玉米粉水勾芡。

6. Sprinkle chopped spring onion and chopped coriander on top. Serve.
撒上葱花和芫荽即可。
