西餐厅里经常看到这道西式肉碎意大利面,不过现在在家也能煮出厨师般水准的意大利面了。
Ingredient and Portion
(for 4 pax 4人份)
350 gm spaghetti / 350克 意大利面条
400 ml water / 400毫升 水
Salt & pepper to taste / 盐和胡椒粉调味

Bolognaise sauce / 肉碎酱汁:
60 ml olive oil / 60毫升 橄榄油
1 onion - chopped finely / 1粒 洋葱 - 切碎
2 cloves garlic - chopped finely / 2瓣 蒜头 - 切碎
300 gm minced chicken / 300克 绞碎鸡肉
400 gm canned whole tomatoes - blend till fine / 400克 罐装整粒番茄 - 搅烂
½ tsp mixed herbs / ½茶匙 混合香草
1 chicken stock cubes / 1粒 鸡精块

Chopped parsley / 荷兰芹屑
50 gm grated Parmesan cheese / 50克 芝士丝
Method
1.Heat oil, fry chopped onions and garlic till soft, add minced chicken and cook for 5 minutes, then stir in canned tomatoes,mixed herbs and chicken stock cubes.
烧热油,加入洋葱屑和蒜茸炒至软,加入绞碎鸡肉炒 5 分钟。加入罐装番茄、混合香草和鸡精块。

2.Bring to the boil, reduce heat and simmer till sauce is thick.
把混合料煮滚,改小火煮至浓稠。

3.Boil spaghetti in large pan of salted water till al dente (means firm to the bite), drain well and serve with bolognaise sauce.
把意大利面放入一大锅加了盐的滚水内煮至刚熟,滤干,配肉碎酱汁。

4.Sprinkle cheese and chopped parsley on top.
撒下芝士丝和荷兰芹屑便可。
