Ingredient and Portion
150g butter / 150克 牛油
80g caster sugar / 80克细砂糖
1 tbsp grated lemon rind / 1大匙柠檬皮屑
1 tbsp lemon juice / 1大匙柠檬汁
180g plain flour / 180克普通面粉
1/4 tsp baking powder / 1/4小匙发粉
1/8 tsp bicarbonate of soda / 1/8小匙苏打粉
50g digestive biscuits (crushed) / 50克消化饼(压碎)
2 tsp strawberry emulco / 2小匙草莓浓酱

(Garnishing / 装饰)
ornamental icing /装饰糖霜
Method
1. Beat butter and sugar in a mixer until fluffy. Add in lemon rind and lemon juice, mix well.
将牛油和砂糖放入搅拌机打发至松白,加入柠檬皮屑和柠檬汁,拌匀。

2. Sift flour, baking powder and soda, fold into butter mixture together with crushed biscuit and strawberry emulco, mix until forms dough.
将面粉、发粉和苏打粉过筛,与消化饼粉末和草莓浓酱一起加入牛油混合物中,拌匀成面团。

3. Wrap well the dough and refrigerate for 1 hour.
把面团包好,存入冰箱冷藏1小时。

4. Roll out the dough between two sheets of plastic paper, about 5mm.Cut out snail shapes and place on to the baking tray.
取出面团,放在塑料纸之间,杆薄约5毫分, 切出蜗牛形状,排再入烤盘里。

5. Bake in preheated oven at 160℃ for 15-20 minutes or until golden brown.
盛入预热烤箱烘以160℃烘约15-20分钟,或至金黄色。

6. When cool, decorate with ornamental icing. When the icing was solidification, keep into airtight container.
冷却后,加上喜爱的糖霜颜色,凝固后即可存入密封罐子储存。
