Shelled Shrimp with Lotus Root and Lotus Seeds, simple and refreshing dish to cook today. Gravy's just nice to be eaten with rice while the lotus root and seeds contains nutrious vitamins for our body!
双连炒虾仁食谱就是用莲藕来与虾一起炒,不但可以吃到虾的鲜味,还可以吃到爽脆的莲藕。还有这道菜汁最适合就是配饭,就是有浓浓的鲜味。
Ingredient and Portion
120g medium prawns / 120克中型虾仁
150g local lotus root / 150克本地莲藕
100g white lotus seeds / 100克白莲子
80g button mushrooms in can (halved) / 80克罐装蘑菇(切半)
30g carrot (sliced) / 30克红萝卜(切片)
2 garlic cloves (sliced) / 2粒蒜瓣(切片)
1 tbsp "Shaoxing" wine / 1大匙绍兴酒
100mI water / 100毫升清水
Seasoning
1/4 tsp salt / 1/4小匙盐
1/2 tsp pepper / 1/2小匙胡椒粉
1/2 tsp sugar / 1/2小匙糖
Method
1. Soak lotus seeds in water over night. Cook it in boiling water over medium high heat for 20 minutes until slightly soften. Dish up, rinse under running cold water, drain well.
莲子用清水浸泡隔夜。莲子放入沸水中以大火滚煮20分钟至软化,捞起,用冷水冲洗过,沥水备用。

2. Heat up 1 tbsp oil in a preheated wok to saute garlic over low heat until fragrant. Add the prawns with lotus root, lotus seeds, mushroom and carrot, stir-fry briskly over high heat until aromatic.
镬里烧热1大匙油,以慢火爆香蒜片,加入虾仁、莲藕、莲子、蘑菇和红萝卜,改用大火翻炒片刻至香浓。

3. Add in water and seasoning, bring to boil. Covered, simmer for 5 minutes, scatter the "Shaoxing" wine, mix well. Serve at once.
加入清水和调味料煮沸,盖上,焖煮5分钟 ,撒上绍兴酒拌匀,即可。
