Shakshouka, meaning ‘a mixture’ is a dish where eggs are poached (or baked, sometimes) in a spicy tomato based sauce with various vegetables, most commonly capsicums (red & green pepper), and enhanced by the aromatic paprika, cumin and garlic. It’s no surprise that this dish has recently taken the world by storm. And many variations have since sprouted too. Not only this is extremely satisfying, it’s also really good for you with all that antioxidants from the vegetables. Great way to start the day. This one is extra decadent with the addition of Chorizo sausage, adding a hint of smokiness to the dish.

Ingredient and Portion
1 tablespoon olive oil/ 橄榄油 1 汤匙
1 small onion, diced/ 洋葱 1(小),切碎

1 Chorizo Sausage, diced/ Chorizo香肠 1条,切碎
1 Eggplant, cut into 2 inch pieces/ 茄子 1个,切成2寸块
1 can whole peeled tomatoes (or diced tomatoes), roughly blended/ 去皮番茄(或切碎的番茄)1罐
1 red capsicum, roughly chopped/ 红辣椒,切碎
1 chili (I used bird’s eye, ideally Jalapenos), chopped/ 辣椒 1条,切碎
1 teaspoon cumin/小茴香 1茶匙
1 teaspoon sweet smoked paprika/ 甜辣椒粉熏 1茶匙
1 teaspoon cayenne pepper/ Cayenne胡椒 1茶匙
100ml Heinz Chicken Broth/ Heinz鸡汤 100ml
1 tablespoon tomato paste/ 番茄酱 1 汤匙
salt and pepper to taste/ 盐和胡椒粉
1 handful parsley (chopped), or coriander/ 香菜 少量(切碎)
eggs, to your liking, usually 3-4/鸡蛋,数量以个人喜欢,通常3-4粒
1. In a large pot, heat a little olive oil and stir in the onions and garlic, cook until soften. Add capsicum, eggplant and chorizo and cook for 1 minute or two.
在一个大锅里,放入一些橄榄油加热再搅拌大蒜和洋葱,煮至软化。 加入红辣椒、茄子和香肠一起煮大约1分钟或2分钟。

2. In another pan, fry roasted paprika and cumin until fragrant, then add to the vegetable pot, follow by the tomatoes, chicken broth and chili. Cook for about half an hour, stirring regularly, and season to taste. Add the cayenne pepper and half of the chopped parsley. If the mixture is starting to look dry, add water if needed.

3. Crack eggs into the dish and sprinkle with remaining chopped parsley. Cover and poach eggs for about 3-4 minutes until the eggs are set. Serve with bread or as is for a gluten free meal.
