Shakshouka, meaning ‘a mixture’ is a dish where eggs are poached (or baked, sometimes) in a spicy tomato based sauce with various vegetables, most commonly capsicums (red & green pepper), and enhanced by the aromatic paprika, cumin and garlic. It’s no surprise that this dish has recently taken the world by storm. And many variations have since sprouted too. Not only this is extremely satisfying, it’s also really good for you with all that antioxidants from the vegetables. Great way to start the day. This one is extra decadent with the addition of Chorizo sausage, adding a hint of smokiness to the dish.

Method
1. In a large pot, heat a little olive oil and stir in the onions and garlic, cook until soften. Add capsicum, eggplant and chorizo and cook for 1 minute or two. 在一个大锅里,放入一些橄榄油加热再搅拌大蒜和洋葱,煮至软化。 加入红辣椒、茄子和香肠一起煮大约1分钟或2分钟。
2. In another pan, fry roasted paprika and cumin until fragrant, then add to the vegetable pot, follow by the tomatoes, chicken broth and chili. Cook for about half an hour, stirring regularly, and season to taste. Add the cayenne pepper and half of the chopped parsley.
