1. Rinse chicken drumstick and pat-dry, season with marinade, marinate for at least 2 hours.
2. Arrange marinated chicken drumstick on a baking tray, bake in a preheated oven over 180℃ for approximately 40-50 minutes until cooked, remove, keep aside.
3. To make mint sauce, blend all mint sauce ingredients in a food processor until fine and smooth, dish out, ready to serve.
4. Arrange roasted chicken drumstick on a serving plate, spoon in mint sauce, garnish with mint leaves. Serve hot.
