Red Dates Tong Yuen with Lychee

Ingredient and Portion
170g glutinous rice flour / 糯米粉170克
30g wheat starch (Tang Mein Fun) / 澄面粉30克
2 tbsp icing sugar / 糖粉2汤匙
1/2 tsp salt / 盐1/2茶匙
150-160ml lukewarm water / 温水150-160毫升
25 pieces canned lychee (well drained) / 罐头荔枝25粒(滴干)
25 pieces pitted red dates (pick the large one) / 去籽红枣25粒(选大粒的)

Milk Syrup:/ 糖水:混合
Mix 1 litre sweetened black soya bean milk(commercial packet type) / 甜豆奶1公升(包装货)
250ml evaporated milk / 淡奶250毫升
Method
1.Soak lychee with milk syrup and keep in the refrigerator to chill.
把荔枝放入糖水中,收入冰箱冷藏。

2.Combine glutinous rice flour and wheat starch in a mixing bowl. Add in icing sugar and salt then pour in lukewarm water gradually.Mix into a soft dough.
把糯米粉和澄面粉混合,然后加入糖粉和盐,再倒入温水搅拌搓成软面团。

3.Pinch small pieces of dough and stuff into the cut red dates.
取少许面团搓圆再包入切开的红枣。

4.Drop the red dates tong yuen into a pot of boiling water and cook until afloat.
把包馅汤圆放入滚水里煮至浮起。

5.Serve with chilled lychee and syrup.
加入冷藏的糖水里享用。
Tips
Tip: / 心得交流站:
The stuffed red dates tong yuen cannot be boiled too long in boiling water.
包红枣馅的汤圆不宜煮太久。
