Ingredient and Portion
(Mousse ingredients /慕斯层)
150g pitted preserved plums / 150克 蜜饯梅子果肉
200ml water / 200毫升 清水
1 tsp lemon juice / 1小匙 柠檬汁
30g caster sugar / 30克 细砂糖
1 tsp gelatine powder / 1小匙 鱼胶粉
1 tbsp hot water / 1大匙 热水
180g fresh cream / 180克 鲜奶油
1 tbsp Kirsch / 1大匙 樱桃酒

(Decoration / 装饰)
preserved plums / 梅子
vege leaf / 菜叶

(Utensils / 用具)
9 of 50ml glasses / 9个(50毫升)玻璃杯
Method
1. To make mousse, bring pitted plums, water, lemon juice and sugar to boil until plums are tender. Remove.
慕斯层:梅子果肉、清水、柠檬汁和细砂糖一起煮至梅子稍软,离火。

2. Blend the plums until fine, through sieve.
放入果汁机打成泥,过筛。

3. Melt gelatine powder into hot water, Add into sifted plum puree, mix well.
鱼胶粉和热水调至溶解,加入梅子泥中,拌匀。

4. Whisk fresh cream until soft peaks. Fold into plum mixture together with Kirsch to form mousse.
鲜奶油打起至软性,和樱桃酒一起加入梅子混合物中,拌匀成慕斯。

5. Pipe the mousse into glasses. Refrigerate until set.
把慕斯挤分盛小杯中,冷藏至硬状。

6. Decorate as desired before serving.
取出慕斯,食用前稍加上装饰即可。
