Ingredient and Portion
FOR ABOUT EIGHT 4 1/2-INCH MOULDS / 可做八个4 1/2寸面包

INGREDIENTS A
30g raisins / 葡萄干 30克
30g sultanas / 无籽葡萄干 30克
60g citrus peel / 酸柑皮屑 60克
40g chopped almonds / 切碎杏仁 40克
40g orange juice / 橙汁 40克
20g lemon juice / 柠檬汁 20克
10g rum / 兰姆酒 10克
1/4 tsp nutmeg / 肉豆蔻 1/4茶匙

INGREDIENTS B
350g bread flour / 面包粉 350克
8g yeast / 酵母 8克
140g milk / 牛奶 140克
64g sugar / 糖 64克
4 egg yolks (about 66g) / 蛋黄 4粒(约66克)
1/2 tsp salt / 盐 1/2茶匙
112g butter / 牛油 112克

INGREDIENTS C
1 egg / 鸡蛋 1粒
some almond powder / 杏仁粉 少许



Method
PREPARATION
1.Mix Ingredients A together and let them soak overnight.
材料A拌匀后搁置浸泡至隔夜。

2.Soften butter under room temperature.
牛油置于室温软化。

3.Beat egg (from Ingredients C).
3鸡蛋打散(取自材料C)。

4.Preheat oven at 175°C.
烤炉预热至175°C。

METHOD
1.Place bread flour on the table top and form a well in the centre. Place yeast in the centre. Pour milk in. Bring a little of the flour from the sides to the centre.
在干净的案板上倒入面包粉,然后在面包粉中间轻轻挖开一个井。中间放入酵母,再倒入牛奶。从井的四边逐渐将面包粉拌到中间。

2.Set aside to proof for about 1 hour till crack occurs and mixture bubbles at room temperature.
置于室温让其发酵1小时,直到表层出现裂缝和发泡。

3.Add in sugar, egg yolks and salt, and mix well to form a dough.
加入糖、蛋黄和盐,搅拌成团。

4.Attach dough hook to a mixer to mix the dough. Add in softened butter and knead till smooth. (This may need about 10 minutes.)
将面团放入装有面钩的搅拌机内,加入软化牛油搅拌至柔滑。(需费时约10分钟。)

5.Add in fruits and mix well.
加入水果拌匀。

6.Cover with a piece of plastic and set aside for about half an hour.
面团盖上塑胶袋,搁置松弛半小时。

7.Punch down. Divide dough into 8 pieces and place into baking cases. Let panettones rise in a warm place till they reach to the top. (This may need about an hour.)
以拳头捶打面团,然后分切成8等份,分别放入烤模中,置于温暖的地方再次让其发酵至十分满。(需费时约1小时。)

8.Brush beaten egg on the surface and make a cross slit. Sprinkle almond powder and bake in the preheated oven for about 25 minutes till golden brown and cooked.
发酵好的面团表面刷上蛋液,然后在表面划十字切口。撒上杏仁粉,放入预热烤炉内烤25分钟至金黄色和熟。
