Hash, derived from the French verb Hacher, means “to chop”. It’s a dish consisting of diced ingredients and spices. Potatoes are the most common, followed by sweet potato, the healthier cousin. This is Paleo-friendly, Gluten free, and Dairy Free. But most importantly, it’s super delicious with aromatic spices. Plus who can resist the golden egg yolk trickling down the ‘hill’? I know I can’t. So here it is, my Paleo Vegetable Hash with Fried Egg.

Method
1. Heat the oil in a large skillet over medium-high heat; add the vegetables and onion in an even layer and let it cook without stirring until it takes on a little color on the bottom, about 2 to 3 minutes. 加入油以中火预热,加入蔬菜和洋葱,煮大概2-3分钟,不用搅拌。
2. Give it a stir, then add the garlic, spices, salt, black pepper, and water. Cover the skillet and cook until the vegetables are tender but not mushy, and has taken on a golden color, about 3 to 5 minutes. 搅拌一下,然后加入蒜米、香料、盐、黑胡椒和水。盖上盖子让在锅里煮至蔬菜软,大概煮3-5分钟。
3. Squeeze in the lemon juice and cook until evaporated, about 30 seconds. Serve with the parsley sprinkled on top, and add a fried egg cooked to your liking.
