The basic mirepoix (carrot, celery and onion) is quite essential in this paleo chicken stew recipe, but the rest of the vegetables can be anything: zucchini, capsicum, green beans, eggplant, tomato; whatever rocks your boat.

Ingredient and Portion
2 tablespoons olive oil / 2汤匙 橄榄油
2 stalks Celery, cut into bite-size pieces / 2颗 芹菜, 切粒
1 Carrot, peeled, cut into bite-size pieces / 1条 萝卜,削皮切粒
3 strips Streaky Bacon, sliced / 3片 煙肉,切片
1 small Onion, chopped / 1粒 洋葱,切碎
2 Whole Garlic, cut into halves (of course, feel free to cut the amount) / 2大粒 蒜米, 切半(个人喜好)
Salt and freshly ground black pepper / 盐和现磨黑胡椒
200ml Chicken stock / 200毫升 鸡汤
1 teaspoon dried Oregano / 1茶匙 干牛至
1 tablespoon tomato paste / 1汤匙 番茄酱
1 bay leaf / 1 月桂叶
1 teaspoon Paprika / 1茶匙 辣椒粉
500g Chicken Drumsticks (about 6) / 500克 鸡腿 (大概6个)
2 Tomatoes, diced / 2粒 番茄, 切粒
100g Green Beans, cut into 2 inch piece / 100克 长豆, 大概切2吋长
1 teaspoon tapioca starch (Optional, can use Potato starch too or just add Plain flour in the beginning) / 1汤匙 木薯淀粉 (视个人喜好,可以用玉米淀粉或是普通面粉)
Handful of Parsley leaves, roughly chopped / 一把香菜叶,切碎
Salt and Pepper to taste / 盐和胡椒 适量
Method
1. Heat a non-stick pan and sear the chicken drumsticks until brown. Remove from pan and set aside.
预热不黏锅和把鸡腿煎至金黄色。拿起,备用。

2. Add olive oil and sauté celery, carrot, onion for few minutes, then add the garlic, followed by dried oregano, paprika, tomatoes, tomato paste, bay leaf and chicken stock. Bring to simmer and put the chicken drumsticks back in. Reduce heat to low and simmer for about 30 minutes, stirring occasionally.
倒入橄榄油和加入芹菜、萝卜和洋葱炒香,然后再加入蒜米、干牛至、辣椒粉、番茄、番茄酱、月桂叶和鸡汤。让其焖煮然后在放入煎好的鸡腿。把火调小和慢慢焖煮大约30分钟,偶尔搅拌。

3. When the cooking liquid has reduced to a stew consistency, add green beans, remove the bay leaf, and cook for further 5 minutes. Season to taste with salt and pepper. And as an optional step thicken with some tapioca starch mixed with water. Serve warm as it is, or with bread (rice is good too, if you swing that way).
当看见水分开始减少时,可以加入长豆,吧月桂叶拿走和再焖煮多5分钟。加入适量的盐和胡椒。如果喜欢汤汁浓稠的,可以加入木薯淀粉加入水然后倒入汤汁使更浓稠些。热吃或可配上面包(送饭也不错)。
