乌达乌达在大马是很受欢迎其中一道小吃。而且乌达乌达可以配上不同的食材,味道就有不同的体验。不过,这到食谱只是乌达乌达而已,当你已经完全掌握乌达乌达的精髓后,就可以随意配搭不同食材而做出不同美味的菜肴了。

Ingredient and Portion
500g fish fillet, minced OR prawn meat, minced /鱼柳,或剁碎虾肉500克
5 kaffir leaves, finely chopped /青柠檬叶,切碎5片
2 big eggs /大型鸡蛋2粒
100ml thick coconut milk /浓椰浆100毫升
10 pcs banana leaves, cut into rectangles /香蕉叶,切成长方形10片

Spice Mixture /香料混合料
1 tbsp chilli powder /辣椒粉1汤匙
30g lemongrass, minced /香茅,切碎30克
10g galangal, minced /南姜,切碎10克
20g garlic, minced /大蒜,切碎20克
50g onion, minced /洋葱,切碎50克
15g fresh turmeric (or 1 tsp dried turmeric) /新鲜黄姜(或1茶匙干黄姜)15克
Some pepper, salt, sugar to taste /胡椒粉、盐、糖调味 少许
Method
1. Mix all Spice Mixture together, stir in kaffir leaves, coconut milk, eggs and minced fish/prawn.
将香料混合料拌匀,然后拌入青柠檬叶、椰浆、鸡蛋和鱼/虾碎。

2. Scoop a tablespoon of paste on the banana leaf and fold both ends, using 2 toothpicks to secure the folds.
舀一汤匙肉碎于香蕉叶上,将叶子两端折好,再以牙签定型。

3. On a non-stick pan, heat with a little oil, pan fry both sides of otah till firm.
取一不粘平底锅,烧热少许油,将乌达均匀煎至硬。
