Ingredient and Portion
600g glutinous rice (soaked overnight) / 糯米(浸泡隔夜)600克
270ml coconut milk / 椰浆 270毫升
4 tbsp oil / 食油 4汤匙
some toothpicks and banana leaves for wrapping / 牙签和香蕉叶用作包裹 适量

Filling A (Pounded together)
1 1/2-inch cekor/ sand ginger / 沙姜 1块(1 1/2寸)
12 pieces shallots / 小红葱 12粒
5 cloves garlic / 大蒜 5瓣
5 pieces candlenuts / 月桂豆/石古仔 5粒
1 tbsp coriander powder / 芫荽籽粉 1汤匙
1 tsp pepper / 胡椒粉 1茶匙
3 chillies / 辣椒 3条

Filling B (Minced)
300g shelled prawns / 去壳虾肉 300克
2 tbsp dried shrimps / 虾米 2汤匙
1/4 cup grated coconut / 椰丝 1/4杯

2 tsp salt / 盐 2茶匙
2 tbsp sugar / 糖 2汤匙
1.Mix glutinous rice with coconut milk, and steam over high heat for 30 minutes. Set aside.

2.Filling: Stir-fry Filling A with oil till fragrant, add in Filling B, and continue to stir-fry for a while. Add in Seasonings and simmer for 5 minutes. Set aside to cool.

3.Spread 2 tbsp of glutinous rice from Method 1 in the center of a small piece of banana leaf, add some filling on top and roll it up to form the shape of a small tube. Secure both ends with toothpicks. Repeat till glutinous rice and filling have all been used up.

4.Grill or pan-fry glutinous rice rolls till banana leaves are slightly burnt.
