Ingredient and Portion
Ingredient A
400g grouper fish fillet (sliced into into 1/2-inch pieces) / 石斑鱼片(切成1/2寸块)400克

Ingredients B (Blended)
120g shallot / 小红葱 120克
8 cloves garlic / 蒜头 8瓣
50g turmeric / 黄姜 50克
2 stalks lemongrass / 香茅 2支
30g belacan / 马来盏 30克
25g ginger / 姜 25克
1 tsp coriander powder / 芫荽粉 1茶匙
1 tsp cumin powder / 小茴香粉 1茶匙
8 red chilli / 红辣椒 8条

Ingredients C
6 egg (beaten) / 鸡蛋(打散)6粒
1 1/2 tbsp corn flour / 玉米粉 1 1/2汤匙
120ml thick coconut milk / 浓椰浆 120毫升
1/2 tbsp sugar / 糖 1/2汤匙
1 tsp salt / 盐 1茶匙
1 tbsp finely shredded kaffir lime leaf / 疯柑叶丝 1汤匙

Utensils
20 pieces wild betel leaf/ daun kaduk / 山佬叶 20片
some tooth pick and banana leaf (cut into 8”×5” pieces) / 竹签和香蕉叶 适量(切成8寸×5寸片)





Method
1.Combine Ingredients B with Ingredients C.
将材料B和C混合均匀。

2.Place 1 piece of wild betel leaf in the centre of each banana leaf. Scoop in 2 tbsp of mixture (from Method 1) onto it and place 2 slices of fish fillet on top.
各别将1片山佬叶放在1片香蕉叶的中间,再舀入2汤匙做法1的混合物以及放上2片鱼肉。

3.Fold the long side of the banana leaf toward the centre, and fold the other side over on top of it. Secure both ends with bamboo tooth picks and steam over high heat for 10 minutes.
将香蕉叶长边处往中间摺,并将另一边摺到上面,然后用竹签固定两端,用大火蒸10分钟。取出,即可享用。
