Ingredient and Portion
Ingredients A / 材料A
1 whole chicken leg, deboned / 鸡腿(去骨)1只
50g ground peanuts / 花生碎 50克

Ingredient B / 材料B
200g Hup Loong flour (crispy flour) / 合隆粉(炸粉)200克

Ingredients C (Mixed well) / 材料C(拌匀)
5 tbsp lime juice / 酸柑汁 5汤匙
2 tbsp plum sauce / 酸梅酱 2汤匙
2 tbsp sugar / 糖 2汤匙
1 tbsp fish sauce / 鱼露 1汤匙
10 bird’s eye chillies, shredded / 指天椒(切丝)10条
4 pcs kaffir lime leaf, shredded / 疯柑叶(切丝)4片
1 torch ginger bud, shredded / 姜花(切丝)1朵
5 shallots, sliced / 红葱头(切片)5粒
Some water / 水 适量

Marinade / 腌料
1 egg / 鸡蛋 1粒
1 tbsp plain flour / 面粉 1汤匙
Some pepper / 胡椒粉 适量
Some salt / 盐 适量
1. Rub Marinade all over the chicken leg, set aside for 30 minutes. Coat chicken leg evenly with Ingredient B.

2. Heat up some oil, deep-fry chicken leg until golden brown. Remove and cut into pieces.

3. Pour Ingredients C over the chicken chop, sprinkle with ground peanuts.
Hup Loong flour is available at Chinese grocery stores. It can be substituted with crispy flour as well.
