相信许多人都会喜欢这到炸酱面。就像干捞面,可是这是用肉碎和特别的酱料和面一起捞,可以同时吃到爽口弹牙的面条外,还可以享受特制的酱料。什么味道?试煮就知道了。

Ingredient and Portion
200g yellow noodle (ready to eat) / 黄面 200克(即食)
120g minced pork / 肉碎 120克
30g chopped garlic / 蒜茸 30克
30g chopped shallot / 小葱头茸 30克
30g chopped ginger / 姜茸 30克
Some pork lard (cut into dices) / 猪油渣 少许(切丁)
40g spring onion / 青葱 40克
Seasoning
120g stock / 高汤 120克
2 tbsp Szechuan broad bean chilli sauce / 豆瓣酱 2汤匙
3 tbsp sweet sauce / 甜酱 3汤匙
1 tbsp oyster sauce / 蚝油 1汤匙
2 tbsp light soy sauce / 酱青/生抽 2汤匙
1 tbsp dark soy sauce / 黑酱油 1汤匙
1 tsp sesame sauce / 麻油 1茶匙
Method
1. Poach the noodle in boiling water. Remove and place it in a serving bowl.
把黄面放入沸水汆烫。取出沥干,放入碗内。

2. Heat a wok with some oil, stir fry the pork lard in hot oil until light golden brown.
锅子内烧热一些油,放入猪油炸至浅金黄色。

3. Add in the minced pork, ginger, garlic, shallot, then add stock and remaining Seasonings.
加入肉碎、姜、蒜和小葱头,倒入高汤和其他调味料。

4. Thicken the sauce with some cornstarch solution, pour the sauce over the poached noodle, sprinkle spring onion on top. Serve.
拌入少许玉米粉水勾芡。然后把酱料倒在黄面上,洒上葱花即可。
