Let's have a mini dim sum during teatime!A fragrant from lotus leaf making a delicious dish of glutinous rice. Mini lotus leaf glutinous rice definitely as a classic dim sum delight in your dining table.
Seasoning A / 调味料 A : 1 tbsp oyster sauce 蚝油1汤匙 1 tsp sugar 糖1茶匙 1 tsp chicken powder 浓缩鸡精1茶匙 1 tbsp soy sauce 生抽1汤匙 2 tbsp hot water 热水2汤匙 1 tsp dark soy sauce 黑酱油1茶匙
Seasoning B / 调味料 B : 1 tbsp oyster sauce 蚝油1汤匙 1 tsp sesame oil 麻油1茶匙 1/4 tsp pepper 胡椒粉1/4茶匙 1 tbsp water 水1汤匙 1 tsp corn flour 粟粉1茶匙
Method
1. Drain soaked glutinous rice, steam for 15 minutes, loosen and sprinkle additional water over, steam for another 15 minutes till rice cooked.(pic 1) 将浸泡的糯米沥干,以大火蒸15分钟,用筷子弄松,并洒入适量水份,继续蒸15分钟至熟透,取出待用。(图1)
2. Diced both chinese sausage, mushroom and Char Siew, fry well with dried shrimp. (pic 2-4) 将虾米、腊肠、香菇及叉烧分别切丁炒香,盛出备用。(图2-4)
3. Heat 2 tbsp oil in wok, sauté garlic until fragrant, toss in glutinous rice, and then add in seasoning A.(pic 5) 镬中热2汤匙油爆香蒜茸,下糯米饭炒香,加入调味料A拌炒。(图5)
4. Add in all sauted filling ingredients, stir-fry until well mixed, dish out.(pic 6) 将全部馅料回锅,假如调味料B 翻炒均匀即可盛起。(图6)
5. Trim lotus leaf into 12 sheets, place some glutinous rice mixture and top with one portion of salted egg yolk, wrap up and steam for 5 minutes, done.(pic 7-8) 把荷叶修剪成12张,每张放入炒熟糯米饭,面上加入半粒咸蛋黄,包摺起来,再蒸5分钟即可。(图7-8)
