Main: 5 tbsp oil from salted fish / 咸鱼油 5汤匙 300g minced meat / 肉碎 300克 50g Mui Heong salted fish / 梅香咸鱼 50克 1 stalk coriander (chopped) / 芫荽 1棵(切碎) 1 red chili (chopped) / 红辣椒 1条(切碎) 1 onion(chopped) / 洋葱 1粒(切碎)
Seasoning: ½ tsp pepper / 胡椒粉 ½茶匙 2 tsp fish sauce / 鱼露 2茶匙 1 tsp sugar / 糖 1茶匙 1 tbsp corn flour / 玉米粉 1汤匙 ½ egg white / 蛋白 ½粒
Garnishing: some cucumber & tomato / 黄瓜和番茄
Method
1. Heat oil in wok,sear salted fish until crispy,set aside and keeps the oil. 烧热油,开中火将咸鱼煎至金黄色,捞起放置一旁,保留煎咸鱼的油备用;
2. Debone salted fish and crush it. 将咸鱼骨起出,咸鱼肉按碎;
3. Place all ingredients with seasoning in mixing bowl and blend with hand until springy;separate into 10 portions and flatten into round patties shape. 将全部材料放进搅拌碗里和调味料充份搅拌至起胶,分成10份做成扁圆形肉饼;
4. Sear the patties with the left over salted fish oil in medium heat until golden brown. 烧热煎咸鱼剩下的油,放入肉饼,中火煎至金黄色;
5. Drain and serve with cucumber and tomato. 捞起沥干油份,拌入黄瓜和番茄便可享用。
