Ingredient and Portion
Ingredients / 材料:
300g minced pork (pork with fat) / 猪肉碎 300克(半肥瘦猪肉)
1 tbsp chopped garlic / 蒜茸 1大匙
1 tbsp chopped spring onion / 葱花 1大匙
150g shredded unripe mango / 生芒果丝 150克
1 red chili (shredded) / 红辣椒 1条(切丝)
some cornstarch solutions / 粟粉水少許
1 tsp chopped garlic / 蒜茸 1小匙
1 tbsp cooking oil / 食油 1大匙
Seasoning
1/2 tsp salt / 盐 1/2小匙
1 tsp caster sugar / 砂糖 1小匙
1 tbsp tapioca flour / 薯粉 1大匙
1/2 tsp pepper / 胡椒粉 1/2小匙
1/2 tsp chicken seasoning powder / 鸡精粉 1/2小匙
1 egg / 鸡蛋 1粒

Sauce (mix well) / 汁料(拌勻)
2 tbsp concentrated orange syrup / 浓缩橙汁 2大匙
1 tbsp chili sauce / 辣椒酱 1大匙
2 tbsp caster sugar / 砂糖 2大匙
300ml water /清水 300毫升
Method
1. Put the minced pork and seasoning into a food blender, blend into paste and sticky. Dish out.
猪肉和调味料放入搅拌器,捣烂成肉漿,並打起胶质,取出。

2. Combine meat paste with garlic and chopped spring onion, form the mixture into meat balls. Deep-fry in hot oil until cooked and golden brown. Dish out and drain.
肉漿加入蒜茸和葱花拌勻,做成肉丸,用热油炸熟至金黃色,捞起,沥除油 份。

3. Leave 1 tbsp hot oil in wok to sauté garlic over low heat, add sauce mixture, bring to boil over high heat. Add shredded mango, red chili and meat balls, stir-fry briskly until well combined and the sauce is almost absorbed. Dish out and serve.
镬里留1大匙热油,慢火爆香蒜茸,注入混合汁料,大火煮沸,加入芒果丝、辣椒丝和肉丸,快速煸炒片刻至收汁,即可。
