1. Put the minced pork and seasoning into a food blender, blend into paste and sticky. Dish out.
2. Combine meat paste with garlic and chopped spring onion, form the mixture into meat balls. Deep-fry in hot oil until cooked and golden brown. Dish out and drain.
3. Leave 1 tbsp hot oil in wok to sauté garlic over low heat, add sauce mixture, bring to boil over high heat. Add shredded mango, red chili and meat balls, stir-fry briskly until well combined and the sauce is almost absorbed. Dish out and serve.
