Ingredient and Portion
190 g butter / 190克 牛油
190 g caster sugar / 190克 细砂糖
205 g eggs / 205克 鸡蛋
¼ tsp vanilla essence / ¼茶匙 香草精
145 g plain flour / 145克 面粉
7 g baking powder / 7克 泡打粉
60 g ground almonds / 60克杏仁碎
85 ml mandarin orange juice / 85毫升 橘子汁
rind of 2 mandarin oranges, grated / 2片橘子果皮,切碎
100 g dark chocolate / 100克 黑巧克力
100 g whipping cream / 100克 奶油
candied mandarin orange (for decoration) / 橘子切丝,装饰
1. Mixed cream butter and sugar together till fluffy. Add eggs one at a time, then the grated mandarin orange rind.

2. Sift together the flour and baking powder, combine with the ground almonds. Fold the flour mixture into the butter mixture alternately with the mandarin orange juice.

3. Spoon batter into a well-greased non-stick 8-inch bundt pan.

4. Bake at 160oC for 45 minutes or until done.

5. Melt the chocolate with the cream and drizzle over the cooled cake. Decorate with strips of candied mandarin orange peel.
