Malaysian Beef Rendang is a very famous local dish. Little spicy and it's best to eat with nasi lemak or just rice will do also. Thus, learn this recipe and cook for family!

Ingredient and Portion
Ingredients A 材料A:
1 1/2kg beef cube / 牛肉丁 1 1/2公斤
200g toasted coconut/ kerisik kelapa / 炒椰丝 200克
300 ml thick coconut milk / 浓椰浆 300毫升
300 ml water / 清水 300毫升

Ingredients B (Blended) 材料B(搅烂):
130g shallot (skinned) / 小红葱(去衣)130克
4 stalks lemongrass (cut into halves) / 香茅(切半)4支
50g galangal (peeled and cubed) / 南姜(去皮,切丁)50克
8 cloves garlic (skinned) / 蒜头(去衣)8瓣
5 tbsp chilli paste / 辣椒糊 5汤匙
1 tbsp coriander powder / 芫荽粉 1汤匙
1/2 tbsp fennel powder / 大茴香粉 1/2汤匙

Ingredients C 材料C:
1 stalk lemongrass (sliced) / 香茅(切片)1支
5 cloves / 丁香5粒
1-inch piece cinnamon / 肉桂1寸
1 piece turmeric leaf (wiped and shredded) / 黄姜叶(抹净,切丝)1片

Seasonings 调味料:
4 tbsp palm sugar/ gula Melaka (crushed) / 椰糖(舂碎)4汤匙
2 tbsp sugar / 糖 2汤匙
1 tsp salt / 盐 1茶匙
Method
1. Heat up 5 tbsp of oil in a wok, add in Ingredients B and stir-fry until fragrant. Add in Ingredients C and stir-fry for a while, followed by beef cubes and mix well.
在锅中烧热5汤匙油,加入材料B炒香。加入材料C拌炒一会儿,然后加入牛肉丁拌匀。

2. Pour in coconut milk and water, mix well and bring to a boil. Reduce to low heat and simmer until the gravy almost dries up and beef cubes are tender.
倒入椰浆和清水拌匀,煮沸,然后转小火煮至汁近收干和牛肉变软。

3. Add in toasted coconut and Seasonings, mix well. Serve.
加入炒椰丝和调味料拌匀,即可盛起。
