Minchee 免治: 200g Ground Beef 碎牛肉 200g Ground Pork 碎猪肉 2 Small Potatoes, peeled and cut into ½-inch cubes 2颗小马铃薯(削皮和切成粒状) Olive oil for cooking 橄榄油 少许 1 medium Onion, finely chopped 1颗洋葱(切成粒状) 1 Bay Leaf 月桂叶 1片 3 cloves Garlic, peeled and crushed 3颗蒜瓣 (切碎) 2 tablespoons Light Gluten-free Soy Sauce 2汤匙 无面筋酱油 1 tablespoon Fish Sauce 1汤匙 鱼露 1 teaspoon Apple Cider Vinegar 1茶匙 苹果醋 Salt and pepper to taste 盐和胡椒 少许 Lemon juice (optional) 柠檬汁(选择性) Fried eggs (optional) for serving — allow 1 per diner, if using 煎蛋(选择性) Sauteed Green Beans/Long Beans for serving (Optional) 煮过的长豆(选择性)
Cauliflower Rice 椰菜花饭: Half head Cauliflower, cut into small florets 半颗椰菜花(剁碎) 1 Tablespoon Ghee or Grassfed Butter 1汤匙 酥油/牛油
Method
1. Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the diced potatoes and cook, stirring occasionally, until the potatoes are golden brown. Remove the potatoes from the skillet and set aside. 在不粘锅里倒入2汤匙的橄榄油, 用中火热锅。热好后,加入切粒的马铃薯粒,翻炒至金黄色, 备用。
2. When the skillet has reheated, add the the onion and bay leaf and sauté until the onion is golden. Add garlic and stir fry for further minute, then add both minced meat and cook for 2-3 minutes while breaking up until it crumbles. 再热一热锅,加入洋葱和月桂叶, 煎至金黄色。倒入大蒜再翻炒一下,加入剁碎的猪肉和牛肉,再煮2-3分钟。
3. Add soy sauce, fish sauce, vinegar, salt and pepper and cook for around 3-5 minutes until the meat is fully cooked. Add the potatoes, mix well, taste for seasoning. Turn off heat and squeeze lemon juice over. Meanwhile, prepare the fried egg, vegetables and cauliflower rice. 加酱油、鱼露、苹果醋、适量的盐和胡椒,再煮约3-5分钟直到牛肉和猪肉都煮熟。之后,加入马铃薯粒,拌好后撒少许调味粉,熄火和榨一点儿柠檬汁进去。这时可以准备煎蛋、长豆和椰菜花饭。
Cauliflower Rice: 1. Cut or tear the florets by hand, remove excess moisture and blend until resembling rice. Mix the cauliflower with some ghee and microwave on high for 2 minutes. 切开或用手剥花椰菜成粒状,除去多余水分后(可用搅拌机)拌成饭粒状。食用前拌一点点酥油,然后用微波炉烤热一点(约2分钟)。
