1. Deep-fry prawns in hot oil over high heat until cooked and golden brown, dish up and drained.
2. Melt butter in a preheated wok to saute lemon grass over medium high heat until fragrant. Add cheese powder, evaporated milk and seasoning, stir-fry over medium high heat until the sauce is thick.
3. Add the fried prawns, stirring constantly until well combined. Serve hot.
