Ingredient and Portion
Ingredients (A) / 材料 (A):
2 crabs (about 1.2 kgs, cleaned) / 螃蟹 2只(约1.2公斤,洗净)
6-8 tbsps cooking oil / 食油 6汤匙
350 ml-500 ml water / 清水 350-500毫升
salt to taste / 盐 适量
1 egg (beaten lightly) / 鸡蛋 1粒(打散)

Ingredients (B) / 材料 (B):
15 shallots (150 g) / 小葱头 15粒(约150克)
4 cloves garlic / 蒜头 4瓣
6 cm (12 g) young ginger / 嫩姜 12克
5 stalks chili padi (chopped all) / 指天椒 5条(全部剁碎)
1 1⁄2 tsp belachan / 峇拉煎 1 1⁄2 茶匙

Ingredients (C) / 材料 (C):
4 tbsps tomato ketchup / 番茄酱 4汤匙
3 tbsps chili sauce orto taste / 辣椒酱 3汤匙
300g fresh star fruit (chopped) / 杨桃 300克(剁碎)
150g pineapple (chopped) / 黄梨 150克(剁碎)

Spicepaste finely ground / 研磨香料:
3 candlenuts / 石古仔 3粒
6 stalks dried chili (soaked & cut into 3cm lengths) / 辣椒干 6条(浸泡后切成3公分长)

Method
1. In a large skillet or wok, heat the oil over medium heat, sautéing ingredients B, and stirring often until fragrant. Add the finely ground dried chillies & candlenut. Add ketchup, chilly sauce, starfruit, pineapple flesh and salt to taste. (pic 1-4)
起锅热油,以中火把材料B爆香,然后加入研磨香料及番茄酱、辣椒酱、杨桃及黄梨炒均,以盐调味。 (图1-4)

2. Add crabs, water and cook for 10 minutes or until crabs are cooked, adjusting seasonings to taste. (pic 5-6)
加入螃蟹和清水,煮10分钟或至蟹熟,再试味。(图5-6)

3. Just before removing from heat stir in the beaten egg and once it sets, remove to serve immediately. (pic 7)
离锅前倒入蛋液,一凝固就盛出上桌。(图7)
