马卡龙是西式甜点其中一个最贵的甜点。而马卡龙拥有不同的口味和颜色,看起来十分吸引。现在在家也能做这道绿茶马卡龙食谱了。

Ingredient and Portion
Ingredients: / 材料:
70g powdered sugar / 糖分 70克
60g Almond powder / 杏仁粉 60克
40g granulated sugar / 砂糖 40克
50g egg white / 蛋白 50克
6g Green tea powder / 绿茶粉 6克

Ingredients for Macaroons Filling: / 马卡龙内陷
50g Chestnut paste / 栗子蓉 50克
25g Light whipped cream / 淡忌廉 25克
Method
Steps to Prepare in Advance:
Step 1: Draw a 3.5cm in diameter round shape onto a buttered paper. Then turn the buttered paper around and place onto the baking tray.
在牛油纸上画出直径3.5cm圆形,翻面铺在焗盆上。

Step 2: Pour powdered sugar and almond powder into a sieve. Sieve twice.
把杏仁粉和糖分混合,过筛2次。

Step 3: Pre-heat oven at 140 degrees.
预热烤炉140度。

Method (For macaroons shell): / 做法 (马卡龙面糊):
Step 1: Beat up 33g of egg white until fluffy. Add in granulated sugar bit by bit and whisk until near stiff peaks.
把33克蛋白打至起泡,然后分2次加入砂糖至打发。

Step 2: Add in Green tea powder (through a sieve); and stir until mixed well.
加入绿茶粉(过筛),搅拌均匀。

Step 3: Add in the mixture of that green tea and egg white that had been whisked earlier and the remaining 17g egg white into the sieved powdered sugar and almond powder mixture and mix evenly. Remember to be soft and use cut & fold technique.
把蛋白霜(已经混合绿茶和蛋白的蛋糊)就是17克的蛋白加入已经过筛的粉类拌均匀。搅拌均匀的过程要轻手,而且要拌均至没有粉粒便完成。

Step 4: Place the mixture into a piping bag. Pipe the mixture onto the buttered paper and it is advisable to begin from the center of the round shape and press the mixture out until it forms a round shape and remember not to pipe out of the round shape.
然后将面糊放入挤袋里,就可以进行挤模了。挤马卡龙的同时也有一定的技巧的,建议大家由圆形的中间部分挤,记得不要挤太多至出模哦!

Step 5: Lightly pat on the baking tray so that the macaroon shell mixture will slightly turn flatter.
然后轻轻的拍打焗盆底部,让马卡龙的表面变平一点。

Step 6: Place macaroons in room temperature for 30 minutes or until the mixture does not stick on your finger when touched.
让马卡龙静坐在室温里大约30分钟,如果面糊不黏手,就可以放入烤盆里烤了。

Step 7: Bake for 12 minutes with 140 degrees.
用140度烤上12分钟,就可以了。

Method for Macaroons Filling: / 马卡龙内陷做法:
Step 1: Mix both ingredients and stir well.
把栗子蓉和淡忌廉拌均。

Step 2: Put into piping bag, and ready to use as filling.
放入挤袋里,挤进切半的马卡龙里,就完成了!
Tips
不同的烤炉温度都不一样,大家应该多试几次。
