无论是鸡肉或是猪肉还是海鲜,煮宫保味都十分美味。辣中带甜,主要的辣味,来自辣椒干和灯笼椒,勾个芡就十分完美了!如果素食者,可以用素鱿鱼来代替,也一样美味哦!

A:
10 stalks dried chili (cut into sections) / 辣椒干10条(切段)
15 pcs toasted cashew nuts / 腰豆15粒(烤香)

B:
200g mock cuttlefish / 素鱿鱼 200克
6 slices ginger / 姜 6片
20g celery / 西芹 20克
20g green capsicum / 大青椒 20克
2 baby corn / 玉米芯 2条
Seasoning
1⁄2 tsp soy sauce / 酱油 1⁄2茶匙
1 tbsp dark soy sauce / 黑酱油 1汤匙
1⁄2 tsp sugar / 糖 1⁄2茶匙
1⁄2 tsp salt / 盐 1⁄2茶匙
1⁄2 tsp vegetarian stock granule / 调味素 1⁄2茶匙
some starch for thickening / 生粉水 少许(勾芡)
Method
1.Blanch cuttlefish in boiling water briefly, drain.(pic 1-2)
把素鱿鱼放入滚水川烫一下捞起滴干水备用。(图1-2)

2.Heat some oil in wok, sauté dried chili until fragrant.Toss in all ingredients B.(pic 3-4)
烧热1汤匙油,把辣椒干爆出味,加入材料B炒匀。(图3-4)

3.Add in some water and seasoning, stir-fry for 2 minutes.(pic 5-6)
注入少许水和调味料,继续炒2分钟。(图5-6)

4.Thicken with starch and dish out. Sprinkle cashew nut on top and serve.
最后加入生粉水炒干即可盛出,撒上腰果上桌。
