1. Pumpkin seeded and cut into slices, then steam and mashed.(pic 1-3) 将南瓜去皮及籽,切片,蒸熟压成茸备用。(图1-3)
2. Crush salted egg yolk; cut tofu into quarters and deep fry until golden brown, drain.(pic 4-5) 咸蛋黄压碎;豆腐一开四,以热油炸至香酥,捞出沥油。(图4-5)
3. Keep some oil in wok, sauté egg yolk until fragrant, toss in curry leaves, mashed pumpkin and seasonings, stir to mix, pour over fried tofu, serve immediately. (pic 6-7) 镬中留少许油,放入咸蛋黄炒香,加入咖喱叶、南瓜泥及调味料炒匀,淋在炸香的豆腐上,即可上桌。(图6-7)
