Ingredient and Portion
Ingredient A
1kg minced pork (front leg meat) /上肉碎1公斤

Ingredients B
1/2 tsp freshly ground red yeast rice 现磨红麴米 1/2茶匙
220g sugar / 糖220克
1 tsp pepper / 胡椒粉1茶匙
1/4 tsp five spice powder / 五香粉 1/4茶匙
2 tbsp fish sauce / 鱼露 2汤匙
2 tbsp light soy sauce / 生抽 2汤匙
1 tbsp oyster sauce / 蚝油1汤匙
1 tbsp rose wine / 玫瑰露酒 1汤匙
1 tbsp Shaoxing wine / 绍兴花雕酒1汤匙

Method
Preparation
1. Mix Ingredients B in a bowl, pour all into minced meat and mix well.
将材料B放入碗内拌匀,加入肉碎拌匀。

2. Leave aside to marinate for 2 hours, stir constantly.
搁旁腌2小时,不时拌匀。

Method / 步骤:
1. Line a plastic sheet on a tray, spread and flatten meat thinly on sheet.
在大盘上铺一张塑料纸,将全部肉碎倒在塑料纸上,抹平成薄片状。

2. Use a round cutter to cut out meat, remove and arrange them on a greased baking tray.
用圆形饼干模切割出圆形肉片,取出肉片排在抹油的烤盘上。

3. Put in the Space Oven Wok and bake at 50°C until dry or can be lifted up easily. Alternatively you may bask meat pieces under the sun until dry and can be lifted up.
放入太空烘炉,以50°C烘干或至肉不粘盘底。也可日晒至干透和容易取出。

4. Arrange the meat pieces on the rack of oven to grill at 150°C on both sides until golden brown.
将金钱肉排在太空烘炉的烤架上,用150°C烤至两面金黄色即可。
Tips
Do not use lean meat to do this, otherwise it will be very tough after grilling.

建议不要选全瘦肉,否则烤过的瘦肉口感很硬。
