Glaze A / 涂液A: 1 egg / 鸡蛋 1粒 1 tbsp water / 清水 1汤匙
Glaze B / 涂液B: 2 eggs + 1 egg yolk(light beaten and strained)/ 鸡蛋 2粒 + 蛋黄 1粒(打散过滤)
Method
1. Combine golden syrup,oil and alkaline water in a mixing bowl. Stir to mix and leave aside to rest for at least 4 hours. Add in super fine flour and knead into a soft dough. Set aside to rest for 30 minutes. 把糖浆、油和碱水混合后停放4小时,加入低筋面粉,搓成面团,再让它醒30分钟。
2. For the filling:Spread pickled onion (kew tau) on a baking tray and bake in a preheated oven at 150℃ for 6 minutes till dry. Arrange salted egg yolks on a baking tray,bake in preheated oven at 150℃ for 12 minutes and then mash it. 把荞头碎铺在烤盘上,放入预热至150℃的烤炉里烤约6分钟至干;另外把咸蛋黄也烤12分钟,然后捣散。
3. Mixes lotus paste with pickled onion and salted egg yolk evenly. Divide the filling into portions of 30g each and roll into balls,pressing them fairly tight to prevent it from crumbling and falling apart. 莲蓉和荞头碎及咸蛋黄混合,然后分成30克1份,搓圆后压紧以防裂开。
4. Divide the pastry dough into portions of 40g each. Wrap up each piece with a ball of filling;and then press into moon cake mould then knock out. 把面团分成40克1份,包入馅料后搓圆,放入月饼模里,轻压后扣出。
5. Brush moon cakes with glaze A. Bake in a preheated oven at 180℃ for 10 minutes. Remove and leave aside for 5-6 minutes. Brush with glaze B then bake again for 10-15 minutes. 为月饼刷上涂液A,然后放入预热至180℃的烤炉里烤10分钟,取出后晾5-6分钟,刷上涂液B,再烤10-15分钟即可。
