Ingredient and Portion
Ingredients: / 材料:
30g Scotch fish maws / 30克 敏鱼花胶
10g bamboo fungus / 10克 竹笙
6朵 香菇(泡软)/ 6 dried Shiitake mushrooms (soaked)
300克 鸡大腿肉(剁块)/ 300g chicken thigh (cut into pieces)
some lettuce / 适量 生菜
1 litre water / 1公升 清水

Marinade: / 腌料:
1/2 tbsp light soy sauce / 1/2大匙 酱油
1/2 tbsp cooking oil / 1/2大匙 食油
1 tsp cornstarch / 1 小匙 栗粉
Seasoning
Seasoning: / 调味料:
1/2 tsp salt / 1/2小匙 盐
1 tsp chicken stock powder / 1小匙 鸡精粉
1/2 tsp pepper / 1/2 小匙 胡椒粉
Method
1. Soak fish maws in water overnight until soften. Soak bamboo fungus and discard the both ends, squeezed and drain, keep aside.
将花胶用清水浸泡隔夜至软化。竹笙泡软后,修剪头尾两端, 挤干水份,备用。

2. Season the chicken pieces with marinade, marinate for 20 minutes.
鸡肉加入腌料拌匀,腌渍20分钟。

3. ln a pot, add the water and bring to boil over high heat. Add in seasoned chicken and the rest of ingredients. Cook over high heat for 15 minutes, then stir in seasoning. Serve hot.
清水入锅,大火煮沸后,加入鸡肉及其余材料,大火滚煮15分钟,最后加调味料拌匀。

4. Lay lettuce in a serving bowl, add in soup. Serve hot.
生菜垫碗,注入花胶鸡汤,即可上桌。
