总多茶类之中,伯爵茶的味道是最香和不会太浓。同时也适合做甜品,无论是蛋糕或是曲奇也是不错的。
Ingredient and Portion
A: Cake Mixture / 材料(蛋黄面糊):
Cake Flour 75g / 低筋面粉 75克
Egg 1 / 鸡蛋 1粒
Egg Yolk 5 / 蛋黄 5粒
Corn Oil 60ml / 玉蜀黍油 60毫升
Milk Powder 2 tablespoon / 奶粉 2大匙

B:Ingredient of Meringue Powder / 蛋白霜材料:
Egg White 5 / 蛋白 5粒
Sugar Castle 60g / 细糖 60克
Tartar 1/4 teaspoon / 塔塔粉 1/4茶匙

C: Other Ingredients / 其他材料:
Earl Grey Teabag 2 bag / 伯爵茶包 2包(约4g)
Water 100ml / 水 100毫升
Method
1. Add in earl grey tea bags into 100ml water, cook in low heat for 5 minutes and put aside.
将伯爵茶茶包加入100毫升水里煮大约5分钟,待凉备用。

2. Place baking paper in the bottom of cake mould.
铺一张烘炉纸在模的底层。

3. Pour the flour in a big bowl after sieve, pour in ingredient C (cooling) and ingredient A, well combined.
面粉先过筛后倒入碗中,加入材料C (冷却后),再加入材料A,搅拌均匀,备用。

4. Put 2 cup of hot water into the oven, and preheat to 120c degree.
先将2杯热水放入烤箱里,以120度预热烤箱。

5. Blend the egg white with tartar powder.
用搅拌器以高速将蛋白打至起泡,然后加入塔塔粉。

6. Add sugar by 3 times, and stir together with egg white until it until foaming.
分3次将细糖加入蛋白里,一起打发。

7. Add the egg white with 3-4 times into the egg batter (from method 3), stir and mixed well, and then pour it onto the cake mould.
把打好的蛋白分3-4次加入面糊中 (步骤3),用刮刀轻轻搅拌均匀,最后倒入模中。

8. Bake for 120 degrees and 70 minutes.
水浴方式将蛋糕以120度,烤70分钟。

9. Enjoy the cake after completely cool down.
将烤好的蛋糕冷却后,脱模切开即可。
Tips
在模子的边缘部分抹了一层油,然后洒上一点面粉,在脱模的时候就会漂亮许多了。
Put some oil on the side of the cake mould and some powder. It looks better when turn out the cake.
