Crispy and aromatic dry-fried prawns.

香脆的虾壳,鲜甜的虾肉,淡淡咸香味。
Ingredient and Portion
Prawns 300g / 明虾 300克
Garlic / 蒜茸
Soy Sauce / 酱油
Sugar / 糖
Scallion / 青葱
Parsley / 香菜
Method
1. Remove head and legs, stab the vein from back. Rinse with water and pat dry.
大虾去脚,背部剖开,挑出虾线,然后处理干净

2. Pour the oil into frying pan, heat to 180ºC and add in garlic to cook.
热锅下油,倒入蒜茸起锅

3. Add in the prawns to fry until it pink and crispy.
把大虾放进锅里煎至干身或是虾的颜色变红透,直到大虾两面煎至干身,肉壳分离

4. Pour in soy sauce,sugar and water,
倒入酱油、砂糖和水拌在一起的调味

5. Cook until aromatic then remove to serving plates.
等到虾完全吸收了调味的酱汁后,就可以上碟了

6. Meanwhile, add in some spring onion and parsley to taste before serving plates.
同时还可以加上青葱和香菜一起拌,这样会使虾更美味
