1. Wash and cut pork ribs in small bite, blanch in hot water, drain and set aside; skinned potatoes and cubed. 排骨洗净切小块,川烫好沥干备用;马铃薯去皮洗净切小块。
2. Heat oil in wok, saute shallot and garlic till aromatic. Add in curry powder, some water and seasoning, fry well become curry paste, dish out. (pic 1) 锅内热油,爆香蒜茸与小葱头茸, 放入咖哩粉、调味料及少许水炒香成咖哩糊料,盛出。(图1)
3. Add some oil to the wok, fry the potato cubes until lightly browned and soft, add in big onion, pork ribs and 1 cup of water, cook till meat tender. (pic 2-3) 镬内热适量油,将马铃薯炒至半软后,加入大洋葱及排骨一起翻炒至香,注入清水1杯煮至肉软。( 图2-3)
4. Add in curry paste, lemon grass, red chilies and santan, bring to boil. Turn to low heat, add cur¬ry leaves, simmer for about 20 minutes, done. (pic 4) 加入咖哩糊料、香茅、红辣椒及椰浆煮滚。加入咖哩叶,转小火煮约20分钟后即可上桌。(图4)
