Ingredient and Portion
1.2 kg lamb meat / 羊肉1.2公斤
3 stalks serai / 香茅3支
6 stalks curry leaf / 咖喱叶6支
5 pcs cloves / 丁香5粒
5 pcs nutmeg seeds / 豆蔻籽5粒
2 inches cinnamon / 肉桂条2寸
800ml thin coconut milk / 次椰浆800毫升
200ml thick coconut milk / 椰浆头200毫升
5 tbsp cooking oil / 食油5汤匙

Sub-Ingredients / 配料
600g potato (peeled and deep fried) / 马铃薯600克(预先去皮炸熟)
2 tomatoes (cut wedges) / 番茄2粒(切块)
1 onion (cut wedges) / 洋葱1粒(切块)

Grind Ingredients (Grind with some water) / 研磨料(加水研磨成糊)
15 dried chili / 辣椒干15条
10 pips smoked garlic / 黑蒜米10瓣
180g shallot /小葱头180克
6 pcs Buah Keras / 石古仔6粒
5 slices ginger / 姜5片

Spice Powder Ingredients / 香料粉
1 tbsp coriander powder / 芫茜粉1汤匙
2 tsp fennel powder / 小茴香粉2茶匙
1 tsp turmeric powder / 黄姜粉1茶匙
3 tbsp meat curry powder / 肉类咖喱粉3汤匙
Seasoning
1 1/2 tbsp sugar / 糖1 1/2汤匙
1 tsp salt / 盐1茶匙
2 tbsp concentrated chicken stock / 浓缩鸡上汤2汤匙
Method
1.Clean and wash lamb meat, blanch in boiling water with ginger and spring onion.
将羊肉清理干净,放入滚水中,加姜和葱川烫。

2.Heat 3-5 tbsp oil in wok, sauté grind spices ingredients until fragrant, and then adds in cinnamon stick, nutmeg seeds and cloves.(pic 1-2)
在锅里热上3-5汤匙的油,把磨碎料爆香,加入肉桂条,豆蔻籽和丁香稍微拌炒。(图1-2)

3.Add in all spices powder, stir-fry until aromatic, toss in lamb meat and stir-fry until color changed.(pic 3-4)
加入香料粉翻炒2-3分钟至香味溢出,倒入羊肉拌炒至变色。(图3-4)

4.Add in thin coconut milk, cover the lid and simmer for 1-11?2 hour until meat soften.(pic 5)
加入次椰浆,盖上锅盖,用小火焖1-1个半小时羊肉熟软。(图5)

5.Add in potato, onion and tomato and bring to boil; add in thick coconut milk and seasoning, bring to quick boil, done. (pic 6)
加入马铃薯、洋葱及番茄煮滚,最后加入椰浆头及调味料煮滚即可。(图6)
