1.Clean and wash lamb meat, blanch in boiling water with ginger and spring onion. 将羊肉清理干净,放入滚水中,加姜和葱川烫。
2.Heat 3-5 tbsp oil in wok, sauté grind spices ingredients until fragrant, and then adds in cinnamon stick, nutmeg seeds and cloves.(pic 1-2) 在锅里热上3-5汤匙的油,把磨碎料爆香,加入肉桂条,豆蔻籽和丁香稍微拌炒。(图1-2)
3.Add in all spices powder, stir-fry until aromatic, toss in lamb meat and stir-fry until color changed.(pic 3-4) 加入香料粉翻炒2-3分钟至香味溢出,倒入羊肉拌炒至变色。(图3-4)
4.Add in thin coconut milk, cover the lid and simmer for 1-11?2 hour until meat soften.(pic 5) 加入次椰浆,盖上锅盖,用小火焖1-1个半小时羊肉熟软。(图5)
5.Add in potato, onion and tomato and bring to boil; add in thick coconut milk and seasoning, bring to quick boil, done. (pic 6) 加入马铃薯、洋葱及番茄煮滚,最后加入椰浆头及调味料煮滚即可。(图6)
