Ingredient and Portion
Ingredients / 材料:
150g abalone mushroom / 鲍鱼菇 150克
1 lemon / 柠檬 1粒

Batter / 脆浆:拌匀
80g plain flour / 面粉 80克
6g rice flour / 粘米粉 6克
4g corn flour / 粟粉 4克
2g baking powder / 发粉 2克
1/2 tsp custard powder / 蛋黃粉 1/2茶匙
1/4 tsp salt / 盐 1/4茶匙
10g oil / 油 10克
120g water / 水 约120克

Lemonade sauce / 柠檬芡汁:
50g lemon juice / 柠檬汁 50克
40g sugar / 糖 40克
80g water / 水 80克
1 tsp custard powder / 蛋黃粉 1茶匙
some lemon rind / 柠檬皮碎 少许

Thickening / 勾芡:
1/2 tsp corn flour / 风车粉 1/2茶匙
1 tsp water / 水 1汤匙
Method
1. Cut half of lemon into rings and obtain juice from the other half.
将柠檬一半切片排上碟,另一半榨汁备用。

2. Remove the stems of abalone mushroom, coat with batter and deep fry briefly, dish out and return to wok, deep fry again until crispy.
鲍鱼菇剪去菇蒂(鲍鱼菇脚不要),沾上脆浆炸至金黄色,捞起片刻再回镬炸脆上碟。

3. Boil all the lemonade sauce ingredients and thicken with starch; pour over fried abalone mushroom and serve hot.
煮滚柠檬芡汁,勾芡至适合浓度,淋上炸好的脆菇片上,趁热享用。
