Ingredients A 350g dried cuttlefish head / 干鱿鱼头 350克 some oil (for deep-frying) / 炸油 适量
Ingredients B 1 tbsp chilli boh / 辣椒糊 1汤匙 3 cloves garlic (finely minced) / 蒜头(剁细茸)3瓣
Ingredients C 120g sugar / 糖 120克 1 tbsp maltose / 麦芽糖 1汤匙 1 tbsp tomato sauce / 番茄酱 1汤匙 1/2 cup water / 清水 1/2杯 1/4 tsp salt / 盐 1/4茶匙
Method
1.Wash dried cuttlefish head and drain, deep-fry in hot oil over medium heat till crispy, remove and leave aside. 将干鱿鱼头洗净和沥干,放入热油中炸至酥脆,取出待用。
2.Add in Ingredients B and stir-fry over low heat till fragrant. 加入材料B,用小火炒香。
3.Add in Ingredients C, mix well and bring to a boil over low heat, stir till the mixture is thickens, then quickly add in fried cuttlefish head and mix well. Leave to cool completely before storing in a clean container. 加入材料C拌匀,用小火煮沸,并拌至混合物变浓稠,立即加入炸鱿鱼头拌匀。待至完全冷却后,盛入干净的容器中即可。
