Ingredient and Portion
2 mud crabs, well washed and chopped into sections /青蟹,彻底洗净,切成数块 2只
2 brown onions, peeled and roughly chopped /棕色 葱,去皮,略切碎 2粒
10 red chillies /红辣椒 10条
30g ginger /姜 30克
20g belacan, roasted /峇拉煎,烤香20克
125ml vinegar /醋 125毫升
4 tbsp oil /油 4汤匙
6 tbsp tomato ketchup /番茄酱 6汤匙
6 tbsp chilli sauce /辣椒酱 6汤匙
4 tbsp light soy sauce /酱油 4汤匙
1/2 tsp salt /盐 1/2茶匙
4 tbsp sugar /糖 4汤匙
Some water /水
2 tsp corn or potato starch, mix in half cup water /玉米粉或马铃薯粉与半杯水混合2茶匙
1 egg /鸡蛋
Some coriander leaves, to garnish /芫荽叶,作装饰少许
Method
1. Blend onion and chilli in a food processor for 30 seconds.
将洋葱和辣椒放入食物处理器内搅拌30秒。

2. Heat oil in a wok and add onion and chilli paste.
镬中烧热油,放入洋葱辣椒糊。

3. Add belacan and continue to cook until most of the liquid from the onion evaporates.
加入拉煎,继续煮至洋葱汁液蒸发。

4. Add vinegar, tomato ketchup, chilli sauce, sugar and salt.
加入醋、辣椒酱、辣椒酱、糖和盐。

5. Add light soy sauce, crab pieces and continue to cook over high heat until shell turns red.
加入酱油和青蟹,继续以大火煮至蟹壳转红。

6. Add starch.
加入玉米粉。

7. Add egg and stir through gently.
加入鸡蛋轻轻拌匀

8. Garnish with fresh coriander leaves.
以鲜芫荽叶作装饰
