1. Blanch cabbage in salted boiling water until soften, let cool down.(pic 1) 将包菜叶放入盐水中川烫至软化,取出待凉备用。(图1)
2. Marinate minced meat with seasoning A, splash it against mixing bowl for about 10 times to make it spingy; than mixes in water chestnut, juliennes cutter fish, spring onion and ginger; knead and divide into 6 round balls.(pic 2-5) 肉碎加入调味料A,用力摔打数10下使肉质产生Q性后,再加入马蹄碎、吊片丝、青葱粒及姜茸搅拌成肉馅后用手挤成六粒圆球状。(图2-5)
3. Wrap the meat ball with soften cabbage leaf.(pic 6) 将肉馅用已烫软的包菜叶包裹好。(图6)
4. Heat 1 tbsp oil in non-stick pan, place cabbage ball on it and roll to coat with oil; then pour in stock enough to cover the meat balls, bring to boil with medium heat until gravy thicken.(pic 7-8) 在镬内放入1汤匙油,放入包菜球稍加滚动使能均匀地沾上油渍,然后加入可淹盖肉球一半的上汤,用中火滚至汤汁呈浓稠。(图7-8)
