1. Rinse the grouper fish belly, cut into convenient pieces and drained. Deep-fry into hot oil until golden in colour. Dish up. Keep them aside. 石斑鱼洗净后斩成适宜块状,沥干后用热油炸香呈金黄色,捞起备用。
2. Heat up 3 tbsp oil in the hot wok to fragrant the garlic cloves, canned olive leaves and ginger slices. Add in winter melon, stir-fry for a while. Pour in water and seasoning, bring to a boil. 镬里留3大匙热油,炒香蒜瓣、榄菜和姜片, 加入冬瓜兜炒一会,注入清水和调味料同煮沸。
3. Add in fish belly pieces and shredded chilli, stir well. Bring back to the boil, reduce to low heat. Covered, and braise for about 20 minutes, or until the sauce is thick. Remove, serve hot. 加入鱼腩和辣椒丝拌炒均匀,再次煮沸后改用慢火,加盖焖煮20分钟至汁浓稠即可。
