1. Heat sesame oil in a stewpot. Sauté ginger and garlic until fragrant.
2. Add chicken feet and lotus root, fry to combine.
3. Add in seasoning, star anise and chow guo. Pour in water and bring to the boil.
4. Reduce heat and braise for 30 minutes until chicken feet are tender.
5. Add in fresh huai san, cook for another 10 minutes.
6. Splash in Shao Xing wine after the flame is turned off.
