Ingredient and Portion
6 pieces pre-fried chicken feet (storebought, rinsed in water) / 现买炸凤爪 6只(以清水洗净)
200g lotus root (cut into thick slices) / 莲藕 200克(切厚片)
150g fresh huai san (cut into thick slices) / 鲜淮山 150克(切厚片)
2 star anise / 八角 2粒
1 piece chow guo / 草果 1粒
1 whole roasted garlic / 燻蒜 1整粒
5-6 slices ginger / 姜5-6片
1tbsp sesame oil / 麻油 1汤匙
1 tbsp Shao Xing wine / 花雕酒 1汤匙
800 ml water / 清水 800毫升

Seasoning:
1 tbsp premium oyster sauce / 蚝油 1汤匙
1 tbsp light soy sauce / 酱油 1汤匙
1/2 tsp dark soy sauce / 黑酱油 1/2茶匙
1/2 tsp pepper / 胡椒粉 1/2茶匙
20g rock sugar or to taste / 冰糖 20克
Method
1. Heat sesame oil in a stewpot. Sauté ginger and garlic until fragrant.
起砂锅热麻油,把姜和蒜头爆香。

2. Add chicken feet and lotus root, fry to combine.
加入凤爪莲藕,炒均。

3. Add in seasoning, star anise and chow guo. Pour in water and bring to the boil.
加入调味料、八角及草果,再注入清水,煮滚。

4. Reduce heat and braise for 30 minutes until chicken feet are tender.
转小火焖煮30分钟至凤爪软化即可。

5. Add in fresh huai san, cook for another 10 minutes.
放入鲜准山,继续煮10分钟。

6. Splash in Shao Xing wine after the flame is turned off.
熄火后赞入花雕酒。
