(1) Cook all spices and seasoning with water in a pot, bring to boil, cook for 10 minutes. Add in duck, cover, bring back to the boil. Reduce to low heat and simmer for 45 minutes.
(2) Remove the duck, hang up to let it dry for 1-2 hours, ready to roast.
(3) Mix all ingredients (B), rub all over into the cavity of the duck. Bake in the preheated oven at 200°C until golden in colour. Remove from heat, cut and serve.
