Ingredient and Portion
Ingredients A / 材料A
1kg beef, cut into pieces / 牛肉(切块)1公斤
300ml coconut milk, mix with 1 cup water / 椰浆(与一杯水拌匀)300毫升
2 onions, cut into pieces / 洋葱(切块)2粒
3 sprigs curry leaves / 咖喱叶 3支
3 stalks lemongrass, flattened / 香茅(拍扁)3支
4 pcs cardamoms / 小豆蔻籽 4粒
2 inches cinnamon stick/ 桂皮 2寸

Ingredients B / 材料B
1 large pc ginger, finely chopped / 姜(搅幼)1大块
8 cloves garlic, finely chopped / 蒜头(搅幼) 8瓣 

Curry Ingredients / 咖喱料
1 1/2 tbsp mixed spice powder / 南芭粉 1 1/2汤匙
1 tbsp cumin powder / 孜然粉 1汤匙
1 tbsp fennel powder / 小茴香粉 1汤匙
1 tsp pepper / 胡椒粉 1茶匙
6 tbsp chilli powder / 辣椒粉 6汤匙
1 tsp turmeric powder / 黄姜粉 1茶匙
2 tbsp light soy sauce / 生抽 2汤匙
2 tbsp dark soy sauce / 老抽 2汤匙
1 tbsp white vinegar / 白醋 1汤匙
1 tbsp yogurt / 优格 1汤匙
250ml oil / 油 250毫升
1. Mixed spice powder, cumin powder, fennel powder with 100ml coconut milk (taken from Ingredients A). Mix chilli powder and turmeric powder with some water.

2. Mix the beef with half of the Ingredients B and 1 tbsp salt until well combined, marinate for a while.

3. Heat up oil, stir-fry lemongrass and the remaining Ingredients B until fragrant. Add curry leaves, onions, cardamoms and cinnamon stick, stir-fry until aromatic. Add turmeric mixture and stir-fry until aromatic. Add the remaining coconut milk, mixed spice paste and Seasonings, stir-fry well.

4. Add beef and bring to a boil over high heat. Switch to low heat, cook until the beef is tender. Lastly, season with 2 tbsp salt.
