Ingredient and Portion
Ingredients A
400g belly pork with skin / 五花肉(连皮)400克
180g potato wedges (fried) / 马铃薯块(炸过)180克
5 Chinese mushroom (soaked in water) / 香菇(浸水)5朵
3 tbsp oil / 油 3汤匙

Ingredients B
5 shallots (sliced) / 小葱头(切片)5粒
4 pips garlic (chopped) / 蒜头(剁碎)4瓣
1 tbsp bean paste / 豆酱 1汤匙
1/2 tbsp coriander powder / 芫荽粉 1/2汤匙
1 inch cinnamon / 肉桂 1寸
Seasoning
4 cups water / 清水 4杯
1 1/2 tbsp sugar / 糖 1 1/2汤匙
1 tbsp soya sauce / 酱油 1汤匙
1 tbsp dark soya sauce / 黑酱油 1汤匙
1/2 tsp white pepper powder / 白胡椒粉 1/2茶匙
Method
1.Slice belly pork into 3cm pieces.
将花肉切成3公分厚片。

2.Saute ingredients B with oil over low flame for 1 to 2 minutes.
以小火用油炒材料B约1至2分钟。

3.Add sliced pork and stir-fry for a while.
加入花肉片,炒一会儿。

4.Add seasonings, mix well and bring to boil.
加入调味料,搅匀和煮开。

5.Add mushroom and simmer over low flame till pork is tender.
加入香菇,以小火焖至花肉变软。

6.Add potato wedges and simmer for 5 minutes.
加入马铃薯块,再焖约5分钟即可。
Tips
Bamboo shoots chunk may be added if desired.
也可加入竹笋块。
