Ingredient and Portion
Ingredients A
800g belanak / mullet / 鲻鱼/草乌/乌鱼 800克
150g turmeric (shredded) / 黄姜(切丝)150克
oil to deep-fry fish / 油(煎鱼用)适量

Ingredients B
100g ginger (finely shredded) / 姜(切细丝)100克
35g garlic (finely shredded / sliced) / 蒜头(切细丝/切片)35克

Ingredients C
3/4 cup vinegar / 醋 3/4杯
3/4 cup water / 清水 3/4杯
150g sugar / 糖 150克
1 tsp salt / 盐 1茶匙
2 chilli (shredded) / 辣椒(切丝)2条
Method
1.Clean fish, remove innards, descale, wash and drain.
洗净鱼、去除内脏和鳞片、冲洗和沥干。

2.Deep-fry in hot oil till crispy, set aside.
2以热油炸至香脆,待用。

3.Use 7 tbsp of oil left in the wok to fry turmeric till the oil turn yellow. Discard turmeric.
以之前炸鱼用的7汤匙油炒黄姜至油变黄色,取走黄姜。

4.Place Ingredients B into the same oil and stir-fry over low flame till it turns crispy. Remove and set aside.
加入材料B,以小火炒至香脆,取走待用。

5.Add Ingredients C and simmer until it dissolves completely.
加入材料C ,煮至完全溶解。

6.Pour sauce over the fried fish and garnish with crispy ginger and garlic.
将酱汁淋在鱼上面,放上香脆的姜和蒜头即可。


Tips
This dish is best eaten after one day and can be kept in the refrigerator for a month. To serve, simply thaw it. Do not reheat.

此菜肴在隔一夜后食用会更美味,放入冰箱可保存约一个月。解冻后,无需弄热即可食用。
