1. 豆腐煎蛋|Tofu Omelette 

材料:
嫩豆腐1/2砖|鸡蛋5粒(打散)|韭菜25克(切细末)|虾仁80克(切丁)|大葱头1/2粒(切丁)|半肥瘦猪肉碎80克
Ingredients:
1/2 block soft tofu (smashed)| 5 eggs (beaten)| 25g chives (chopped)|80g shrimp (diced)| 1/2 onion (diced)| 80g minced meat 

调味料:
鸡精粉1茶匙|盐1/2茶匙|胡椒粉少许|粟粉1汤匙|麻油1茶匙
Seasoning:
1 tsp chicken powder| 1-2 tsp salt| dash of pepper| 1 tbsp corn flour| 1 tsp sesame oil

做法:
1. 锅中烧热少许油,放入韭菜炒一会盛起。
2. 将嫩豆腐压烂备用。
3. 把全部材料连同韭菜及调味料充分搅拌均匀。
4. 以少许油烧热平底锅,把一勺混合料放入,以小火煎至两面呈金黄色及熟。
5. 重复做法至混合料用完。
Method:
1. Heat some oil in wok, stir-fry chives briefly and dish out.
2. Smashed soft tofu, set aside.
3. Mixes all ingredients with chives and seasoning.
4. Heat some oil in a pan, add in 1 ladle of egg mixture and sear in low heat until both sides turns golden brown.
5. Repeat steps.

2. 韩式蒸水蛋|Steamed Egg Custard

材料:
鸡蛋一颗|盐 1/4茶匙|水或鸡汁 1/4杯|少许切碎的红萝卜|青葱一条(切粒)
Ingredients:
1 eggs|1/4 teaspoon salt|1/4 cup Water, or Chicken Stock|Pinch of shredded Carrot|1 stalk of Spring Onion, chopped 

做法:
1. 在耐热的陶瓷碗或小的韩式陶瓷锅里打入鸡蛋,并把盐和水加进去,拌匀至有少许泡沫。加入红萝卜,再搅拌均匀,接着在上面撒一些青葱。
2. 在大平锅里加一点水放好蒸架,把蛋液放在蒸架上面,盖好盖子(可选用透明的玻璃盖,这样能看到水和鸡蛋的状况)。用中小火煮10-12分钟,其间要确保还有水在锅子里,以免烧焦。当你看到蒸蛋成型了但还没没开始变成硬块,蒸水蛋就完成了!
3. 打开盖子后,小心地把水蛋拿出来,趁热上桌。
Methods:
1. Combine the eggs, salt, and water in a heat-safe ceramic bowl, such as a ramekin or small ddukbaegi (so I like to call it the Korean claypot). Whisk until well combined and foamy. Add the carrot and stir it to distribute, then sprinkle the spring onion on top.
2. Place the bowl in a large pan fill with water (about half way up the sides) and a metal steaming tray. Cover the pan preferably with a clear glass lid so you can easily watch the water and eggs. Cook over low-medium heat for 10-12 minutes, making sure the water stays at a gentle simmer. The eggs are ready when the middle is just set but still wobbly.
3. Carefully lift the bowl from the pan and serve warm.

3. 爱尔兰炸蛋|Proper Scotch eggs 

料理A:
水煮C蛋4粒(剥壳待用)|蛋液2粒|普通面粉适量|面包糠150克|炸油适量
IngredientsA:
4 hardboiled C eggs|2 egg (beaten) |plain flour (for dusting) |150 g white breadcrumbs| Oil for deep frying

材料B:
农村式肉香肠500克|嫩韭菜1小束(剁碎)|洋莞荽1小束(剁碎)|豆蔻粉1茶匙|芥末粉1汤匙|盐和黑胡椒粉适量
Ingredients B:
500 g farmer style sausage meat|1 small bunch fresh chives (finely chopped)|1 small bunch fresh parsley leaves(finely chopped)|1 tsp nutmeg powder|1 tbsp mustard powder dash of salt|Ground black pepper

做法:
1.将水煮蛋剥壳待用;将香肠衣剪开取肉,剁碎。
2.把所有材料B混合均匀,然后搓成4丸子。
3.准备3个碟子,分别装面粉、鸡蛋及面包糠。 
4.在掌心把一丸香肠肉压平,取1粒鸡蛋沾粉后用香肠肉包起成丸子状。
5.把肉丸子沾粉后摔掉多余的,然后沾蛋液再粘面包糠。
6.起锅热油,慢慢放入肉丸子,炸约4分钟至金黄色。
7.取出放在纸巾上滴干油,待稍凉才切开来吃。
Method:
1. Shelled hardboiled egg and set aside; slit sausages skin to open, and then squeeze out the meat, chopped and set aside. 
2. Combine all ingredients B and divide into 4 balls.
3. Have 3 plates ready - one with a small handful of flour, one with 2 beaten eggs and a third with the breadcrumbs. 
4. In the palm of one hand, flatten one of the sausage balls, roll a peeled egg in flour, and then pop it in the middle of the patty. Gently shape the meat evenly around the egg. 
5. Roll the meat-wrapped egg in the flour, shake off any excess, and then dip into the beaten egg, followed by the breadcrumbs. 
6. Heat the oil in a deep pan to about 150℃. Carefully put the eggs into the hot oil and deep fry for about 4 minutes until golden brown. 
7. Dish out and drain on kitchen paper. Cool the eggs slightly before cut out to serve.

4. 鲑鱼班尼迪克蛋|Eggs Benedict with Smoked Salmon

材料:
马芬面包 1粒|烟熏鲑鱼(三文鱼)少许|牛油果 1/4 粒|蛋 2颗|水 适量|白醋、盐 少许|荷兰酱 2汤匙
Ingredients:
1 English muffin| Some smoked salmon| 1/4 avocado| 2 eggs| Some water| Some white vinegar and salt| 2 tbsp Hollandaise sauce

荷兰酱做法:
奶油 150克|柠檬汁2汤匙|蛋黄 3颗|白酒醋 / 白醋 1汤匙|黑胡椒、盐 适量
Hollandaise Sauce Ingredients:
150g cooking cream| 2 tbsp lemon juice| 3 egg yolks| 1 tbsp white vinegar| white wine vinegar| some black pepper and salt

烹前准备:
1.把蛋敲开,放在小碗内。 
2.烟熏鲑鱼及牛油果切片。
3.马芬面包对切。
Preparation :
1.Crack eggs into small bowls.
2.Cut smoked salmon and avocado into slices. 
3.Slice English muffin into halves. 

做法:
1.在锅子内注入半锅水加热,等水小滚后加入少许的盐、白醋。
2.用汤匙将水以同一方向搅动,使其成漩涡状。 
3.于漩涡旁放入鸡蛋,煮约3-4分钟,待鸡蛋开始凝固成型即可。 
4.将马芬面包放入烤面包机或烤箱,烤至两面带点微微的酥脆,然后铺上几片烟熏鲑鱼,过后再加上几片牛油果,再放上波水蛋,最后再放1汤匙的荷兰酱。
Method:
1. Boil half a pot of water, add some salt and white vinegar when water starts to simmer. 
2. Stir water in one direction using a spoon, to create a whirlpool.
3. Gently place egg at the side of the whirlpool and cook for about 3-4 minutes, until the egg white starts to solidify.
4. Toast or grill muffin until both sides are slightly crispy. Arrange a few slices of smoked salmon on top, followed by avocado slices and poached eggs. Lastly, top with 1 tbsp of Hollandaise sauce.

荷兰酱做法:
1.首先取奶油隔水或小火加热,让它融化。奶油待融化后,去除掉表面的油渣并过滤,只留下澄清奶油,盛到小容器里备用。 
2.在碗里放入3颗蛋黄,轻轻拌匀。加入柠檬汁、白醋、适量的盐及黑胡椒,以隔水加热的方式加热。 
3.一面搅拌蛋黄,一面慢慢加入澄清奶油,以打发的动作搅拌至勾芡状即可(切记不要过度浓稠, 如果太过浓密可以加一点点盐水或柠檬汁)。
Method of Hollandaise Sauce:
1. Warm cooking cream either by double boiling or heating over low heat. Remove grease from the surface of melted cream. Filter and set aside.
2. In a bowl, whisk 3 egg yolks lightly. Add lemon juice, white vinegar or white wine vinegar, some black pepper and salt. Double boil the mixture. 
3. Stir egg yolks constantly while adding strained cream, whisk until thickened. Add some lemon or salt water if sauce is too thick.

5. 荷兰酱水煮荷包蛋|Eggs Benedict Recipe 

材料:
火腿肉2片(煎过)|厚白面包2片|水煮荷包蛋2个|荷兰酱4汤匙|剁碎洋芫荽适量
Ingredients:
2 slices ham (seared)|2 thick slices toasted bread|2 poached eggs|4 tbsp Hollandaise sauce|Some chopped fresh parsley for garnish

做法:
1.把蛋黄和柠檬汁混合,然后以手动搅拌器搅拌至松发。
2.把蛋汁隔水继续搅拌,但不能接触到热水,以免蛋黄煮熟变硬。
3.边搅拌边加入溶解牛油,搅拌至容量变双倍为止,然后以辣椒粉和盐调味。
4.熄火把荷兰酱放在温热处待用。
Method:
1. Vigorously whisk the egg yolks and lemon juice together in a mixing bowl. 
2. Place the bowl over a saucepan containing barely simmering water with no contact to the water. Continue to whisk rapidly. Be careful not to let the eggs get too hot or they will scramble. 
3. Slowly drizzle in the melted butter and continue to whisk until the sauce is thickened and doubled in volume; and then season with dash of paprika & salt. 
4. Remove from heat place in a warm spot until ready to use. 

6. 菠菜奶油蛋|Baked Spinach Creamy Egg

材料:
鸡蛋4粒|菠菜500克|鲜奶油180克|牛油10克
Ingredients:
4 eggs|500g spinach|180g fresh cream|10g butter

调味料:
盐和胡椒粉适量
Seasoning:
Pinch of salt & pepper

做法:
1.菠菜只取叶子,洗净后川烫约2分钟,然后浸泡在冷水里,再挤掉水分,切细待用。
2.在耐热容器里涂抹牛油,然后把菠菜铺入,淋上鲜奶油,但留4 汤匙备用。
3.用汤匙背部在菠菜上挤压出凹槽,把蛋打入槽里;同样步骤弄另外三个凹槽,填入鸡蛋。
4.在每个鸡蛋上面倒入1汤匙的鲜奶油,然后撒上少许盐和胡椒粉,放入烤炉以180°C烤15分钟即可。
Method:
1. Use only the spinach leaves and wash thoroughly. Parboil the leaves for about 2 minutes and then soak in cold water to cool down; then squeeze out excess water and chopped them.
2. Grease heat proof container with butter; arrange spinach at the bottom and pour fresh cream over (keep 4 tbsp fresh cream for alter use).
3. Use the back of spoon to press 4 shallow on the spinach, break an egg into each shallow. 
4. Pour 1 tbsp of the reserved fresh cream on top of each egg and then sprinkle pinch of salt and pepper over, bake in oven at 180°C for 15 minutes, done.

7. 蜜糖芥末酱水煮蛋|Honey Mustard Sauce on Poached Egg

料理A:
洋芫荽 少许|蜜糖 1/2 汤匙|英国芥末酱 1/2 汤匙|美乃滋 3汤匙
Ingredients A:
some parsley| 1/2 tbsp honey| 1/2 tbsp mustard| 5 tbsp mayonnaise

材料B:
菠菜叶 100克|蒜米 1茶匙(切碎)|橄榄油 1茶匙|盐和胡椒粉 适量
Ingredients B:
100g spinach| 1tsp chopped garlic| 1 tsp olive oil| salt and black pepper to taste

材料 C:
鸡蛋 2粒|米醋 2汤匙|法国面包 2片
Ingredients C:
2 eggs |2 tbsp rice vinegar| 2 slices french baguette

做法:
1.把材料A搅拌均匀备用。
2.准备一锅沸水,加入少许米醋,把蛋打入碗中,用汤匙顺时钟把水搅拌至看到漩涡,倒入蛋煮约2分钟捞起浸入冰水中备用。
3.预热平底锅,用橄榄油爆香蒜米,加入菠菜叶和调味料炒熟取出备用。 
4.法国面包擦上少许牛油烤至金黄色。
5.铺上炒熟的菠菜,再摆上水煮蛋,淋上蜜糖芥末酱即可享用。
Method:
1. Mixes ingredients A, set aside.
2. Boil a small pot of water, add in vinegar, break egg into a bowl, and then stir the boiling water until you see the whirlpool in the water, slowly tip the egg into the water, and let the egg white wrap around the yolk for about 2 minutes, take out and soak in iced water.
3. Heat pan, sauté garlic with olive oil until fragrant, toss in spinach and season to taste.
4. Spread butter on baguette and toast until golden brown.
5. Stack spinach on baguette and top with poached egg, pour over honey mustard sauce and serve.

8. 淡奶炖蛋|Steamed Egg Custard

材料:
鸡蛋 2只|淡奶 50毫升|糖 30克|水 150毫升
Ingredients:
2 eggs| 50ml evaporated milk| 30g sugar| 150ml water

做法:
将水加热后,把糖放入热水搅拌至溶化。
蛋打散,加入做法1的糖水及淡奶,一起打到起泡泡。筛掉泡泡。
锅加水煮滚。蛋倒入小炖盅或饭碗内,加盖放入锅里,慢火蒸6-7分钟,关火焖一下即可。
Method:
1. Boil water, add sugar and stir until sugar dissolves. 
2. Beat eggs, add syrup from Method 1 and evaporated milk, beat until fluffy. Scoop out the foam.
3. Boil water in a wok. Pour egg mixture into small steaming pots or bowls, steam over low heat for 6-7 minutes. Turn off the heat and let it sit for a while.
