Sometimes the more simple the dish looked like, the more compleks the cooking method is. For example like this vegetable. It looks very simple by just throw in all vegetables and fry them. But to fry till each of them also taste sweet then you need to put some efford into the sauce there. I like the lotus and black fungus the most. They are crunchy.

It is quite hard to search for old traditional cooking method nowadays. This Wat Dan hor is actually fried using more than 60 years back cooking method. That's why when the chef fried the whole Wat Dan hor, you can't see they use any garlic or oil. They want to remain the taste as much as possible. The sauce is thick and then they taste quite sweet too. The wok hei taste is very strong.

Indonesian food is one of the food I like the most. They have lots of spices as well as they are spicy too. This ayam penyet, the chicken was smashed before served. That's why the meat is really very tender and soft. Extra credit for it is the sambal that they gave is real spicy. They are burning hot. Warning to those who can't take any spicy at all.

I like to eat fish. The main reason is the meat is soft and it taste very delicious. When comes to Sam kee seafood, I even like their seafood more. Delivered fresh daily from pangkor. That's why when this dish is served, immediately you can see freshness. The fish is sweet. Same goes to the soup too.

Compare to the chicken version hot pot, this pork hot pot is not that spicy at all. This pork is more towards sweet taste. Event though you ordered the most spicy in the menu for this pork, the taste still quite sweet. This pork hot pot is more like neutralize the spicy of chicken to my tongue.
