The less remarkable dish at Hakka Rang was this salted chicken. The texture of chicken was very coarse and tough, surely not for old men. I have tasted tender steamed chicken before and I know it is achievable! The only special feature of this dish was the salted way of cooking. Not too salty, which was good but the texture of the chicken could definitely be improved ALOT!

The one dish that I enjoyed very much at Hakka Rang was this fresh bean curd with spring onion. Served cold, the texture of bean curd was very smooth and silky. It was almost effortless in this dish, apart form the simple garnishing and perhaps the preparation of the gravy. Wherever they source their bean curd from, it was good. The soy sauce was salty to complement the lack of flavor of bean curd itself. Garnished with spring onion and some chopped spring onion, it gave the dish a very fragrant aroma.

It was a simple dish, but when they served it smoking hot, it was great to whack it down just like that. Tomatoes did not dominate but added some sweetness into the egg, which was slightly salty and fluffy too. Good to eat it on its own.

The vegetables was cooked well as it was not too raw, or too cooked. It tasted very fresh and juicy. A little oily but better than yao choi.

We had this claypot fish soup which looked utterly good in the menu, but when we saw the serving, it was only a big black claypot with hidden fish meat. The soup was very murky but did not taste milky.

I love the flavor of the soup as it was packed with the goodness of fish and wolf berries.
However for non fish lover, you might hate the fact that it was so bony that it made the soup alittle less enjoyable.

Most of the dishes in Putien look amazing on the menu but let me warn you, it might look exactly the same. Same goes to this iced bitter gourd. The dish itself so interesting that we couldn't help to order. It was decorated in such a lovely way, don't you think so? The iced bitter gourd was crispy and crunchy, but slightly bitter, which was alright. Served with honey, it was used to balance the bitterness but surely they could be more generous with their honey serving.
