小弟吃遍這麼多擋的炒粿條,這擋是我覺得第二好吃的炒粿條,豬油渣夠香脆也不會小粒,有古早味道,炒得不濕也不干!

This is the second best fried kuey tiao, nice fried pork lard, with ancient early taste, must try!

huffy好失水準的飯店,魚不夠熟,不新鮮,鐵公雞冷冰冰,排骨的肉軟軟的,分量少,阿伯點菜點少一樣菜,點菜的人應該重複菜單,價錢超貴,環境不優美!

琼香的东主符先生每一天都得买入大量的鸡翅膀,用来改造成顾客口中的铁公鸡。把鸡翅膀的关节拗一拗,再把骨头挤出来,然后连皮带肉地翻转过来,便形成了圆圆的肉球露出一支小骨,类似伸出拳头、想要打架的样子。搬来搬去,琼香始终离不开十五碑。十五碑是父亲从芙蓉来吉隆坡发展的第一个落脚地。最早的时候琼香只卖杂菜饭,后来才改做煮炒。父亲离世之后,当年年纪轻轻的符先生便开始走入厨房,与母亲一同经营琼香,而招牌菜铁公鸡正是他和母亲一起改良的菜色。

同样位于茨厂街的联美应该是吉隆坡第二老的福建面摊。摊位的位置不好找,因为隐藏在丽丰茶餐室旁边的巷弄里头。联美现已传到第三代,仍坚持使用炭火炒面。这里的福建炒面的特色是吃起来有一股炭炒的焦香味,可见炭火之猛!除了福建炒面,联美的肉饺汤也是一绝。这里的用餐环境十分简陋,是唯一的缺点。

不管炒面炒粉都全情投入的福建摊主,坚持炒福建面绝对少不了猪油渣和左口鱼粉。这正如他每每炒面,就自然启动的脸部表情与手脚动作,近乎面肌痉挛般,非得要边炒,边提肩、眨眼、抬眉,而且每个动作完全遵照炒铲声响的律动,很少跳脱拍子。猛炒快铲一轮之后,还要来个抛锅动作,激荡出熊熊火舌,一碟福建面才算礼成,终于可以上桌了。
