Each piece of the baked spare ribs was large and meaty with beautifully charred edges that perfectly baked. The meat was tender, when I put it into my mouth, it's kinda soft, sweet and a little bit oily. This is a dishes that are bone licking good. However I'm not a fan of ribs. I more likely to eat meaty parts than bone parts. But it's worth to try!

The full name of the dish is Roasted Tobacco Smoked Lamb Rack with Purple Potatoes, Celeriac Mash and Berries Sauce. I expected the roasted tobacco smoked lamb rack to have an intense smoked flavour, but it was quite mild. The lamb meat is a little hard, but it's still okay. Adding in a little more salt should grant it more tasty.

This dishes came in the form of a quail egg, soft and creamy placed on the fresh oyster and topped with a spoon of caviar. The combination of freshness juicy oyster, creamy yolk and salty caviar was simple yet tasty. The freshness of the oysters were further enhanced by the egg yolk. I also like the luxurious addition of caviar on top!

The full name of this dishes are Pan Seared Line Catch Sea Bream Fillet with Apple Black Rice Puree and Whitebait Omelette. The delicate sweet flesh contrasts nicely with the crunchy fish skin. The slightly tangy apple black rice puree helps to reduce some fullness feel of my stomach as I ate so many of courses dish.

I found the buffet section was kinda lack of food that I expect, walking all round just found cheese sausage and prawn ball that I like to eat. The buffet is mostly ala carte style so I just order those things I want from the menu provided. The grilled prawn I order was quite fresh, and it is just balance, not overcook. But the service there was slow serving up this grilled prawn had me waiting for about half and hour.
